John (along with Griffin's egg cracking help) made a bunch of Mjuk Pepparkaka (Swedish gingerbread or spice cake) last weekend. I posted a few pics on Instagram and people have asked for the recipe. So here it is!


Mjuk Pepparkaka

1/2 cup shortening

1 cup sugar

3 eggs

2 tsp cinnamon

1 tsp ginger

3/4 cloves

1 tsp cardamom, optional

1/2 tsp salt

1 tsp baking soda

1 1/3 cup sifted flour

1 cup sour cream

bread crumbs - we made our own and then bought some when making our own became too tedious for multiple loaves

Cream shortening and sugar together until fluffy. Add eggs, one at a time, beating well after each. Sift spices with salt, baking soda and flour twice. Add flour mixture to creamed mixture alternately with sour cream. Blend well. Butter a fluted 9 x 3 1/2" tube pan (or a 9 1/2 x 5 1/4 x 2 3/4 inch loaf pan and sprinkle with fine, dry bread crumbs, until inside of pan is well coated. Spoon batter into pan. Bake at 325 for about 50 minutes or until done. 



We gave each of Griffin's teachers a loaf, tied with our quilt tag and a photo tag I did for Minted. I'd make them again just for the amazing smell of gingerbread!
